Think of this one like an Italian version of our jowl or "dixie" bacon: sliced, salt-cured pork jowl, to be crisped in a pan and enjoyed with breakfast, crumbled over a salad, slid on top of a burger, etc.

We took a few hogs to a specialty processor in east PA for some wonderful "uncured" products, including bacon, ham and charcuterie.  The simple, clean ingredients are the perfect compliment to our organic fed, pasture raised pork.  No added nitrates or preservatives.
