Smokey, meaty pork shoulder that tastes like bacon?! Our butcher calls it "Hillbilly Bacon" but we just call it delicious.
Relatively lean, this "bacon" is a lot like a more tender, more convenient ham or "canadian bacon." We chop it for use in scrambles and on pizzas. It doesn't crisp up quite like regular bacon would, but still tastes fantastic on a piece of bread!

Did you know that toxins are concentrated in fat? For something delicious and higher fat--like bacon and ham--it's all the more important to choose meat that is raised on organic feed, like our pork!
We love to make bacon in the oven: optionally, cover a rimmed baking sheet with foil. Lay the bacon strips on the sheet close together without overlapping them. Place in a COLD oven and set it to 400F. Set your timer for 12 minutes, and then keep an eye (and a nose) until they are crisped to perfection. Remove and set on a paper towel to cool.
Don't forget to pour all the lovely organic-fed, pasture-raised bacon fat into a jar! Keep it in the fridge and use it for sautéing veggies, frying eggs, greasing your crock pot liner, roasting potatoes.... <3
