Egg Roll in a Bowl

This quick one-skillet meal is a family favorite. We double the recipe to have some leftovers, and add a side of rice if the kids need extra carbs.

Ingredients
- (1 lb) Ground Pork
- (1 medium) onion, chopped
- (1-2 tablespoons) sesame oil (or other oil, but the sesame makes the dish!)
- (2) garlic cloves, or 1-2 tsp garlic powder
- (1 teaspoon) ground ginger
- (3 tablespoons) tamari (gluten free), soy sauce, or coconut aminos
- (1) 16 oz bag of coleslaw mix, or head of cabbage thinly sliced
- Salt and Pepper, to taste
- (1 teaspoon) red pepper flakes (optional)
Directions
- Brown the ground pork in a large skillet over medium heat, until fully cooked
- Turn the heat up to medium high. Add the sesame oil and then the chopped onions, until onions are lightly browned
- In a small bowl or jar, mix the garlic, ginger, tamari. Add to the skillet, and immediately top with the shredded cabbage.
- Cook until cabbage is tender and wilted to your family's preference, and sauce is stirred through.
- Top with red pepper flakes if using.
